BELLE'S SOFT MOLASSES COOKIES | |
1 cup molasses (Grandma's) 1 3/4 tsp. baking soda 1 cup yogurt or buttermilk 1/2 cup butter, melted 1 tsp. ginger 2 tsp. cinnamon (or 2 tsp. ground ginger) 1 tsp. salt flour (enough to make a soft dough) Add baking soda to molasses and beat thoroughly; add milk, butter, spices and flour (enough to allow mixture to drop easily from spoon). Cover bowl with plastic wrap and refrigerate for at least one hour or overnight. Toss 1/2 of the mixture onto a well-floured board, roll lightly to 1/4-inch in thickness. Cut with rounded cookie or biscuit cutter dipped in flour. Spray or brush a cookie sheet with non-stick spray or vegetable oil. Place cookies onto cookie sheet leaving 3/4 inch between cookies. Bake in a preheated 375°F oven until lightly golden around edges (8-12 minutes). Remove and cool on a wire rack. To keep batter from spreading, allow cookie sheets to cool between batches.
