PORK CHOPS WITH APPLES, APRICOTS
AND FIGS
 
8 lg. center cut pork chops, 1 1/2 to 2 inches thick
1/2 c. white wine
1/2 c. chicken broth
6 oz. dried apricots
6 oz. dried figs
3 cooking apples, peeled & sliced
3 yellow onions, sliced
1 1/4 c. brown sugar
1 1/2 tsp. cinnamon
1 tsp. ginger

Use wide flat baking dish, attractive enough to bring to table. Arrange chops in a single layer. Cover with remaining ingredients. Bake at 350 degrees for 1 1/2 hours. Cover casserole with foil. Open foil, push fruit aside and allow chops to brown 1/2 hour. I serve this with asparagus salad, rolls and a divine dessert.
