TOMATO BASIL COMPOTE 
1 tsp. olive oil
1 tbsp. minced garlic
2 oz. red wine
10 med. tomatoes, peeled, seeded & diced
1 oz. fresh basil, roughly chopped
1 oz. butter

In hot skillet, saute garlic in oil. Add tomatoes and cook 2 to 3 minutes. Add wine and simmer for 5 minutes. Add basil and butter. Salt and freshly ground pepper if desired.
