MARINATED VEGGIES WITH BASIL 
1 sm. head broccoli
1 sm. head cauliflower
3 med. carrots
1 sm. red onion

MARINADE:

3/4 c. vinegar
1/2 c. olive oil
1 tbsp. Dijon mustard
1/2 tsp. lemon juice
1 tsp. sugar
3 tbsp. chopped fresh basil

Blanch broccoli and cauliflower for 2 to 3 minutes in boiling water. Drain and rinse with cold water. Break the broccoli and cauliflower into small florets. Dry thoroughly. Cut carrots into thin sticks. Slice onion and separate into rings. Place veggies in bowl. Beat marinade ingredients together. Pour over veggies. Cover and refrigerate, stirring occasionally.
