BRAISED POLISH SAUSAGES WITH
CABBAGE

For a quick-to-fix meal, all you need to add to this menu is a crisp green salad and crusty bread. Fresh apples and cheese make a perfect dessert. Preparation time: about 25 minutes.

FOR 4 SERVINGS YOU WILL NEED:

2 lbs. Polish sausages, precooked
2 tbsp. butter
1 clove garlic, minced or pressed
1/2 c. white wine or beef broth
1 sm. head cabbage, quartered
1 tsp. mixed Italian-style herbs
Dijon or German-style mustard

1. Pierce sausages so they will not burst while cooking or slice them in 2 to 3 inch lengths.

2. Heat butter in heavy, deep skillet. Add garlic; saute 1 minute. Add sausages and brown over medium to high heat, turning occasionally.

3. Pour in wine or broth. Add cabbage and herbs. Cover. Reduce heat to low. Cook 15 minutes or until cabbage is tender-crisp.

4. Serve with spicy mustard, such as Dijon-style or German-style.

TIPS: You may substitute any precooked sausage for the Polish, such as bratwurst, dinner franks or Swedish potato sausage.

FOR 2 SERVINGS: Half of the ingredients. FOR 8 SERVINGS: Double the ingredients.

This is a delicious meal and I serve it exactly as recommended - with a crisp green salad & some wonderful crusty rolls from the bakery. Everyone I've ever cooked this for loved it and asked for the recipe. Thanks!

I made this with half the suggested meat and served it with rice. It served 4 of us, and since I cut the sausage into 8 big pieces I saved 4 for the next day.

The next day I cut the leftover cabbage into bite sized pieces, sliced the sausage into disks about 1/2 inch thick, and in half, so they were half coins, added 1 cup of broth, 1 minced garlic clove, 1 tsp of Italian seasoning and my leftover rice. I stirred all of this together in a frying pan, seasoned with salt and pepper and oh boy was it AMAZING! I never remembered the mustard for the original dish, and our German exchange student really loved it, saying it was like food he gets in Germany. He loved the leftover dish just as much, and had to hold himself back from eating the entire dish!
