SUMMERTIME TOMATOES WITH BASIL | |
3 lg. tomatoes 1/3 c. olive oil 1/4 c. red wine vinegar 1 tsp. salt 1/4 tsp. pepper 1/2 clove garlic, crushed 1 tbsp. chopped parsley 1 tbsp. chopped fresh basil or 1 tsp. dried basil leaves 2 tbsp. chopped onion Cut tomatoes into 1/2 inch thick slices and arrange in a shallow dish; set aside. Combine remaining ingredients in jar, cover tightly and shake vigorously. Pour over tomato slices. Can be made up to several hours before serving. |
