CREAMED EGGS ON TOAST 
1 1/2 c. milk
3 tbsp. flour
1/2 tsp. salt
2 tbsp. butter
3 boiled eggs
4 slices of toast

Put 1/2 cup of milk and flour into shaker. Put 1 cup of milk into pan and heat. Add the milk and flour mixture and the salt and butter. Let mixture thicken. Add finely chopped boiled eggs to mixture. Serve hot on toast.

This is the same recipe my Grandma's Mom made over 100 years ago, over the years my Dad started adding a little celery salt and it's surprisingly delicious.

This is very good. I made two changes. Added a little dried mustard to bring out the white sauce taste and instead of chopping the eggs I cut them with an egg slicer. Really makes a much prettier presentation. Sprinkle with a little paprika for color. makes a great brunch dish.

The original recipe is wonderful! Finally a recipe that everyone loves. And it is so simple, too. My mother used to make chopped egg sandwiches (egg salad) and just chopped the eggs up with the end of a spoon. I loved the different sized egg-white pieces. That's mom's homemade touch. I can still hear her spoon hitting the bottom of a ceramic bowl as she chopped up the eggs.

Grandma made this for Dad when he was a boy. Mom made this for me when I was a girl. :) Now, I make it for myself as a "comfort" food. Any time I wish Mom could give me a hug (she's not dead, just 6 states away...) I make this.

To make it a little heartier, I'll slice up a few cooked sausage links or dice up a few sausage patties and add that to the mixture as well.
