Sometimes the easiest recipes make the best meals. This really is comfort food at it's finest! What's not to love about a quick creamy elegant breakfast of creamed eggs on toast with a dish of fresh melon or strawberries. Serve alongside some crisply cooked bacon and even Dad is happy! This is a throwback to the depression era, when money was tight but you still have a family to feed. Kind of bland, which would make a good dish for someone who is ill, or children. We added a shake or two of hot sauce and that perked it up. Good recipe to have "in your back pocket".
