AUNT SALLY COOKIES 
1 cup molasses
1 cup shortening
1 1/2 cups sugar
1/2 cup hot coffee
1 tsp. ginger
1/2 tsp. nutmeg
2 tsp. baking soda
3/4 tsp. salt
1/4 tsp. cloves
6 cups flour

Mix together cookie dough using 4 to 5 cups of flour. Add enough or the remaining flour, as needed, to make a stiff dough; chill thoroughly.

Roll out and cut with empty Spam can. When rolling, don't roll too thinly.

Preheat oven to 375°F for 15 minutes. Bake for 10-15 minutes. Cool then frost.

FROSTING:

1 env. Knox unflavored gelatin
1 c. cold water
1 3/4 c. powdered sugar
1 c. sugar
1/2 tsp. vanilla

Soak gelatin in cold water. Add white sugar and stir in heavy saucepan. Bring to boil and simmer for 10 minutes. Measure powdered sugar into large bowl. Pour hot mixture over powdered sugar. Add vanilla. Beat until thick with electric mixer. (It takes a long time, about 15 minutes.)

This is my all-time favorite cookie. My mom used to buy them when I was little. Eventually they were dropped from production. But she found this recipe when she traveled south one winter. Today, I cannot find my ONE copy of this; so I was elated to find it here! I love this frosting... my friends thought I had brought store bought cookies to a cookie party. :)
