“THAI CHICKEN STIR-FRY WITH SPICY PEANUT SAUCE” IS IN:

THAI CHICKEN STIR-FRY WITH SPICY
PEANUT SAUCE
 
2 whole chicken breasts, skinned, boned & cut into bite-size pieces
1/2 cup peanut butter
1/2 cup water
2 tbsp. soy sauce
1 tbsp. brown sugar
2 tbsp. peanut or vegetable oil
4 cloves garlic, minced
1/2 tsp. crushed red pepper
3 to 4 cups sliced broccoli or spinach

In a small bowl, blend peanut butter, water, soy sauce and sugar; set aside.

In a wok or large skillet, heat oil over high heat. Add garlic and pepper; stir-fry 30 seconds. Add chicken, stir-fry until firm and white, about 5 minutes.

Add broccoli or spinach, stir-fry until bright green, about 3 minutes. Stir in peanut butter mixture. Cook, stirring constantly until sauce is smooth, about 3 minutes.

Serves 4.

Very good recipe. Really enjoyed it. People stop complaining about the peanut butter taste. If you don't want to taste peanut butter. Don't make this recipe.

I used brown sugar, creamy peanut butter, and added some cayenne pepper for a little kick - I have made chicken with peanut sauce many ways but, this was definitely the easiest way and it rivals the recipe used at one of our favorite Thai restaurants - over the years I have learned that simpler is often better - the more complicated a recipe is, the less likely you are to enjoy cooking in most cases. Slicing the chicken very thin is also a good idea - easier to eat and easier for the chicken to absorb the peanut sauce which by the way, I prepare in a separate sauce pan while the chicken is browning - add extra water for a consistency you like.

I am not a very good cook, so this recipe was easy and tasted wonderful. I will agree that it does call for a bit too much peanut butter, so next time I will decrease the amount it calls for and add some more sugar and soy. I can't wait to try it again. I might add some additional veggies too.

This recipe is awesome. I used some chili garlic sauce in the peanut mixture instead of the crushed red pepper. I also used a stir-fry frozen mix of veggies instead of the broccoli/spinach. The peanut butter taste was a little much but I cut it down with adding more soy sauce. I will be making this again.

Loved IT! We whipped this up with left over chicken. Added a bit more water and also added kale with spinach. Put over noodles and also used left over lettuce from lettuce wraps. Delicioso!!!!!

Excellent! I didn't have broccoli or spinach so I used the following veggies: carrots, onion, green pepper & celery. Served it over cabbage instead of rice (less carbs) and added some Asian seasoning while the veggies were cooking. Also used real peanut butter (chunky) and it was delicious!!! My 12 year old son even said it was fantastic!

Very good! Needed salt, more brown sugar and soy sauce. Added a dollop of Thai sweet chili sauce too. Great starter recipe and will make again with these additions.

OMG- SOOO good! I added a bit of rice wine vinegar and used red pepper flakes and not quite all the peanut butter called for but WOW this is fantastic!! I also added chopped peanuts on top for crunch.
