“STIR - FRY CHICKEN & BROCCOLI” IS IN:

STIR - FRY CHICKEN & BROCCOLI 
1/3 cup soy sauce
2 tbsp. brown sugar
1 clove garlic, crushed
1 tsp. ginger
1 tsp. cornstarch
1 1/2 lb. chicken)
1 tbsp. oil
1 bunch broccoli
1 lg. onion

Wash and cut chicken into bite-sized pieces. Combine first 6 ingredients with 1/4 cup water or chicken broth in a bowl, mixing well. Marinate chicken in soy sauce for 10 minutes or longer.

Drain chicken, reserving marinade. Heat oil in skillet. Add chicken in small amounts to prevent crowding. Stir-fry until brown. Remove from skillet and set aside.

Add broccoli and onion to hot skillet. Stir-fry for 1 minute. Add 1/4 cup water, cover and steam for 3 minutes or until broccoli is tender-crisp. Return chicken to skillet, adding marinade. heat through, stirring constantly. Serve over rice.

Makes 4 servings.

Having Celiac disease, this was the perfect recipe for me to make and my hubby just loved it. If only I can get him to lay off the soy sauce a bit, I'd be happy. Made extra sauce by adding a bit more corn starch and a little brown sugar, ginger and soy and water. It was better if I didn't do that but I knew hubby would be wanting more sauce, so I tried to improvise.

chicken was so tender, sauce was incredible! i added extra garlic because i LOVE garlic and a smidgen of sesame oil (about 1/2 tsp) and it was PERFECTO! couldn't ask for a better recipe! :-)

Great simple recipe! I modified a little bit by shredding the ginger and adding basil and we love it! I also did not add the rest of the marinade to lessen the sodium. It came out so much better!
