FRENCH FRIED PEPPER RINGS 
3-6 sweet green or red peppers (or both) (depending on size)
2/3 c. milk
1/2 c. all-purpose flour
1 tbsp. cornstarch
3/4 tsp. baking powder
1/4 tsp. salt
Vegetable oil (enough for deep frying in 1 inch depth)

Wash peppers, remove stems and seeds. Cut into rings about 3/8 inch thick. Heat oil (1 inch deep) in a saucepan (or my favorite, an electric fry pan) to 375 degrees. Beat remaining ingredients well with a rotary or electric beater until smooth. Dip each ring into batter letting excess drip into bowl. Fry a few rings at a time until brown. It only takes about 2 minutes. Drain on paper towels and serve. Enjoy.
