“NANA'S FRUIT AND NUT COOKIES” IS IN:

NANA'S FRUIT AND NUT COOKIES 
1/2 cup confectioners' sugar
3/4 cup butter
1/4 tsp. fine sea salt
1 tsp. vanilla or almond extract
1 tbsp. dark rum
1 1/2 cups all purpose flour
1 cup chopped nuts
1 cup Craisins

Half an hour before baking, soak the Craisins in just enough water to cover; heat in microwave for 1 or 2 minutes. This is an optional step but really makes a difference!

In a mixing bowl, combine sugar, butter and flavorings (vanilla, rum, etc).

Add flour, nuts and Craisins, stirring just until combined (do not overmix).

Divide dough into two equal portions and form into log shapes. Wrap in plastic wrap or wax paper. Refrigerate for 2 hours or overnight. (May freeze for 1 hour instead).

Preheat oven to 300°F. Line a cookie sheet with parchment paper or silicone baking sheet or grease well.

Slice refrigerated cookie dough logs into 1/4-inch thick slices and arrange on cookie sheet.

Bake for 25-35 minutes or til firm. Transfer to a wire rack to cool.

These cookies freeze well.

Makes about 3-4 dozen cookies.
