PERSIMMON COOKIES 
2 c. flour
1/2 tsp. cinnamon
1 tsp. baking soda
1/4 tsp. salt
1/2 c. lard or Crisco
1 c. sugar
1 c. persimmon pulp
1 egg
1/2 c. nuts or raisins
1/2 tsp. coconut extract

Cream together lard, sugar and egg. Add persimmon and mix well. Sift together flour, cinnamon, baking soda and salt. Add to creamed mixture.

Stir in nuts and coconut extract.

Bake at 350°F for 20 minutes.

Roll in powdered sugar. Store in an airtight container.

The cookie is yummy. I was unsure as to how they should look on the cookie sheet. Just used a melon baller to apply the batter to the cookie sheet lined with parchment.
