PERSIMMON GRANOLA COOKIES 
1 1/2 cups all-purpose flour
1 cup sugar
1/2 tsp. baking soda
1 tsp. salt
1 3/4 cups granola
1/4 tsp. nutmeg
3/4 tsp. cinnamon
1/8 tsp. cloves
3/4 cups shortening (Crisco)
1 egg
1 cup persimmon pulp
1 cup chopped nuts
1 tsp. vanilla

Preheat oven to 400°F.

Mix dry ingredients, cut in shortening. Add egg, persimmon pulp, nuts and vanilla. Drop by teaspoon onto ungreased cookie sheet.

Bake at 400°F for 13 minutes.

Variations: Raisin or dates may be added. If you have no granola use rolled oats, but granola is best.
