PERSIMMON OATMEAL COOKIES 
1 1/2 c. sifted flour
1 c. sugar
1/2 tsp. baking soda
1 tsp. salt
1/4 tsp. nutmeg
1/4 tsp. cinnamon
3/4 c. shortening
1 egg, well beaten
1 c. persimmon puree
1 3/4 c. quick rolled oats
1/2 c. chopped nuts

Sift together flour, sugar, soda, salt, nutmeg and cinnamon into mixing bowl. Cut in shortening. Add egg, persimmon, oats and nuts. Beat until thoroughly blended. Drop by teaspoonfuls about 1 1/2 inches apart onto ungreased baking sheets. Bake at 375 degrees about 10 to 15 minutes or until cookies are done. Makes 3 to 4 dozen cookies.

I loved this recipe. Instead of shortening I used 1/2 butter in place of shortening. I also used 3 persimmons which was maybe a tablespoon over a cup, but 3 persimmons seemed to be just right for the nice moisture it left for a perfect cookie!
