PERSIMMON OATMEAL COOKIES 
3/4 c. butter
1 1/2 c. sugar
2 eggs
1 tsp. baking soda
1 c. persimmon pulp
1 1/2 c. rolled oats
1/2 c. shredded coconut
1 tsp. vanilla
1 1/2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. nutmeg
1/2 tsp. cloves
1 tsp. cinnamon
1/2 c. chopped nuts

Cream butter and sugar. Beat in eggs. Stir soda into persimmon pulp and add to creamed mixture. Mix well. Add vanilla. Sift dry ingredients together; adding to cream mixture. Mix well. Stir in rolled oats, coconut and nuts. Drop by teaspoons onto greased baking sheet. Bake at 375 degrees for about 12 minutes. Makes 6 dozen.

NOTE: For a special treat use 1 cup nuts and 1 cup plumped raisins and add 1 teaspoon allspice.
