BAR-B-QUE COUNTRY PORK RIBS
8 country sliced pork ribs - 1 1/2 to 2 inches thick
Salt and pepper to taste
Oil and vinegar marinade

BAR-B-QUE SAUCE:

2 c. ketchup
2 tsp. salt
1/2 c. cider vinegar
1/4 c. steak sauce
1/4 c. Worcestershire sauce
3 tbsp. oil
1 tbsp. hot sauce
3 tbsp. brown sugar
1/2 c. water

Make oil and vinegar marinade of choice and marinate overnight. If that is not possible, marinate at least 2 hours. Drain and pour out marinade. Put pork ribs in baking dish and add a little water and cover with foil and bake at 350 degrees for 1 hour. Preheat grill and place ribs on medium heat and add bar-b-que sauce and grill 10-15 minutes. Serve on warm platter.

BAR-B-QUE SAUCE: Combine all ingredients and heat in microwave for 5 minutes on medium power. Optional additives to bar-b-que sauce: smoke flavoring or honey.

Since microwave ovens vary in power, you may need to adjust your cooking time.

Doin it backward. Season, grill under heavy smoke for 15 to 20 minutes, then slow cook in a tightly sealed pan or dish, with or without sauce (I sometimes use a foil pouch) for 2 to 3 hours in a 225°F oven. Finish on grill for 5 minutes, especially if you did not sauce when they were in the oven. will have more of the "grilled" flavor this way.
