BELLE'S FRESH APPLE-NUT BREAD | |
3 cups all-purpose flour 1 tsp. baking soda 1 tsp. salt 1/2 cup (1 stick) butter, softened 1 cup vegetable oil 2 cups sugar 3 eggs 2 tsp. vanilla 1/2 tsp. cinnamon 1/4 tsp. ginger 2 cups finely chopped apples 1 cup chopped pecans or walnuts Preheat oven to 350°F. Grease and flour two loaf pans. In a medium bowl, stir together flour, baking soda and salt. In the large bowl of electric mixer beat together at medium speed butter, oil, sugar, eggs and vanilla. Gradually add flour mixture, beating until smooth (no more than a minute). Fold in apples and nuts. Turn into prepared pans. Bake until a cake tester inserted in center comes out clean, about one hour. Check at around 50 minutes. Note: Pumpkin pie spice may be substituted for the spices in this recipe. Serve spread with melted butter and cream cheese spread, or topped with a scoop of vanilla ice cream! Submitted by: Belle |
