FRESH APPLE NUT BREAD 
3 c. flour
1 tsp. baking soda
1 tsp. salt
1 1/2 c. corn oil
2 c. sugar
3 eggs
2 tsp. vanilla
2 c. chopped apple
1 c. nuts

Preheat oven to 350 degrees. Grease and flour 2 loaf pans. Thoroughly stir together flour, baking soda, and salt. In large bowl of electric mixer at medium speed, beat together oil, sugar, eggs, and vanilla until combined. Gradually beat in flour mixture until smooth. Fold in apples and nuts. Turn into prepared pans. Bake 1 hour until a toothpick inserted in center comes out clean. Serves 2 dozen.
