SAUSAGE AND PEPPERS 
1 to 2 lb. hot Italian sausage
1 lg. bell pepper, sliced thin
1 lg. onion, sliced thin
1 (8 oz.) can tomato sauce
Italian seasoning
Salt
Pepper

Cut sausage into 4 inch pieces. Butterfly (or slice in half) and cook in skillet until cooked through (no additional oil is needed); drain well and set aside. While sausage is cooking, put small amount of butter or olive oil in a large skillet.

When hot, add peppers and onion; saute until tender crisp. Add tomato sauce and seasonings to taste, stir to mix. Add sausage to mixture and simmer 10 to 15 minutes.

Serve as a main dish or on fresh kaiser rolls for sandwiches.
