Baked Macaroni with Cheese

I used this recipe for homemade macaroni & cheese and it turned out great. The only thing I did a little different was after mixing the cheese sauce and the macaroni in a casserole dish I also sprinkled some additional grated cheese and then stirred it all up. That way it's extra cheesey! But your recipe was awesome

I was so nervous to make this, because I usually only make foodnetwork recipes (that are tested, tried, and reviewed many times). But all the recipes were super complicated. This was easy, and EXTREMELY (surprisingly not bland). I changed it up a bit too. I added breadcrumbs on top for a more home-cooked taste (the Italian ones since there is seasoning in them). I also used a little less salt, but would use even less, maybe 1/4t or 1/3t instead of 1 teaspoon. The cheese already has a ton of sodium in it, as do the breadcrumbs on top so i didnt think it needed a full teaspoon.

I make this often, except that I use corn starch instead of flour for the sauce - I find it much easier to get it smooth and not lumpy. I also use a wire whisk, which gets it nice and creamy. Add a couple of chopped canned chipotle peppers in adobo sauce for a nice kick. If you use a fiber added or whole grain pasta and add some canned corn you get a nice nutrition boost as well.
