BEST-EVER BLUEBERRY BUTTERMILK
MUFFINS
 
2 1/2 c. all-purpose flour
2 1/2 tsp. baking powder
1 c. sugar
1/4 tsp. salt
1 c. buttermilk
2 eggs (beaten)
1/4 lb. butter (melted)
1 1/2 c. blueberries (rinsed and drained)

Sift dry ingredients together into large bowl. Make a well; add buttermilk, eggs and butter. Mix well. fold in blueberries. Fill well-greased muffin tins 1/2 full and bake at 400 degrees for 20 minutes. Serve warm. Makes 2 dozen.

Absolutely wonderful! I made 1 1/2 dozen to make them larger and baked an additional 5 minutes. Sprayed silicone liners work best.

I just made these for 1st time, they are delicious and moist, this recipe is a keeper, it made 6 jumbo and 6 regular size muffins, I love it and will make them again!!!
