BEST-EVER BLUEBERRY BUTTERMILK MUFFINS | |
2 1/2 c. all-purpose flour 2 1/2 tsp. baking powder 1 c. sugar 1/4 tsp. salt 1 c. buttermilk 2 eggs (beaten) 1/4 lb. butter (melted) 1 1/2 c. blueberries (rinsed and drained) Sift dry ingredients together into large bowl. Make a well; add buttermilk, eggs and butter. Mix well. fold in blueberries. Fill well-greased muffin tins 1/2 full and bake at 400 degrees for 20 minutes. Serve warm. Makes 2 dozen. |
