H.'S BEST BLUEBERRY MUFFINS | |
3 c. flour 1 c. oatmeal 4 tsp. baking powder 1 tsp. salt 1/2 tsp. baking soda 1 c. vegetable oil 1 c. sugar 1 c. orange juice 3 eggs 1/2 c. sugar 1 tsp. cinnamon 1/4 c. walnuts 2 c. blueberries Combine 1/2 cup sugar, cinnamon and chopped walnuts and set aside. Mix oatmeal and orange juice in a small bowl and let stand. Combine remaining ingredients except blueberries in large bowl and mix well. Add orange juice/oatmeal mixture. Add blueberries and mix gently. Fill cupcake tins until nearly full. Top with sugar and cinnamon mixture. Bake at 400 degrees for 15 minutes. (You can also substitute cranberries in this recipe.) |
