MARINATED PORK LOIN ROAST 
3-4 lb. boneless pork loin roast
1 tsp. dry mustard
1/2 tsp. onion powder
1/2 c. apple juice
1 tsp. basil
1/2 c. soy sauce

Combine all ingredients except pork roast in small bowl. Place roast in large plastic bag; pour sauce over roast. Press air out; close top securely. Marinate 2 hours or more turning meat over occasionally. Remove roast from bag, reserve marinade. Place roast on rack in shallow roasting pan. Roast in 325 degree oven 2-2 1/2 hours. Brush roast with reserved marinade every 10 minutes during last 1/2 hour of cooking time. Heat and serve remaining marinade with pork.

I didn't care for the basil. I would probably try poultry seasoning or sage or thyme next time. Also, the aroma of the marinade as it scorched in the bottom of the roasting pan was not very pleasant. Next time I'll keep a little water in the bottom of the pan to prevent that.

This recipe was yummy. I have a few suggestions. I omitted the basil but used 1/2 tsp. of each rosemary and tyme. I also added jar chopped garlic and a dash of black pepper. I marinated the loin overnight turning several times, but leaving the fat cap side up overnight so the meat is in the liquid throughout the night. I recommend basting the roast several times during cooking and decrease cooking time or watching it close during last half hour. My extremely picky 9 year old went back for seconds.
