MARINATED PORK LOIN ROAST 
3 to 4 lb. boneless pork loin roast

MARINADE:

1 tsp. dry mustard
1/2 tsp. onion powder
1/2 cup apple juice
1 tsp. basil
1/2 cup soy sauce

Combine all marinade ingredients in small bowl. Place roast in large Ziploc style plastic bag; pour sauce over roast. Press air out; close top securely.

Marinate for 2 hours or more in refrigerator turning meat over occasionally.

Remove roast from bag, reserve marinade. Place roast on rack in shallow roasting pan.

Roast in 325°F degree oven 2-2 1/2 hours. Brush roast with reserved marinade every 10 minutes during last 1/2 hour of cooking time.

Heat and serve remaining marinade with pork.

I made this dish for my husband's birthday, and it was a big success! I used the same marinade as the recipe suggested but added some cumin and chili powder to it. The roast came out perfectly tender and delicious - so much better than anything you can get at a restaurant! My husband loved it and requested it again for our next family gathering.
