GRANDMA'S SAND TARTS 
2 lbs. sugar
4 eggs
1 lb. butter
2 lbs. flour
2 tsp. pure vanilla (optional)

This recipe requires the use of a scale for baking in correct proportions.

Combine all ingredients; do not overmix to avoid tough cookies.

Roll out thinly (1/8-1/4-inch) on a lightly floured surface and cut into desired shapes using a cookie cutter dipped into flour before each cut.

Brush cookies with an egg beaten until it is light in color. Sprinkle with sugar, cinnamon, and chopped nuts, if desired.

Bake on greased cookie sheets in a preheated 350F oven until golden, 8-12 minutes, depending upon size of cookies.

For lighter cookies, add 2 tsp. baking powder; the original recipe, over 150 years old, did not call for either baking powder or vanilla.

Very similar to my recipe except Mom would beat the egg whites into a stiff form and place a tsp. of egg white with a nut on the very thin cookie and sprinkle cinnamon sugar over it all. It became a very rich ,fragile, cookie that disappeared quickly in our home at Christmas.

Same here with egg white frothy to brush tops, very very thin, so can see through them and we use all brown sugar for the sugar -2 pound bag, and a whole pecan on top of each. I use lots of different shapes.
