BEST EVER LEMON BLUEBERRY
MUFFINS
 
2 2/3 c. unbleached flour
1 tsp. baking powder
1 tsp. salt
1/2 c. sugar
2 eggs
1 c. milk
2/3 c. olive oil
1 c. blueberries
1/2 tsp. lemon peel, grated

TOPPING:

4 tbsp. melted butter
1/2 c. sugar

Preheat oven to 350 degrees. Mix thoroughly together in mixing bowl all ingredients, except blueberries. Gently spoon berries in mix. Spoon in paper lined or greased muffin tin. Bake 20 minutes. Remove from oven and dip top of each muffin in melted butter, then in reserved sugar.
