PASTA WITH SAUSAGE AND PEPPERS 
1 lb. hot and 1 lb. sweet sausage
3 tbsp. olive oil
1 c. sliced onion
2 tbsp. minced garlic
3 lg. green peppers, julienned
1 c. dry red wine
1 lg. can Italian plum tomatoes
1 tbsp. oregano
1 tbsp. thyme
1 tsp. fennel
Salt, fresh pepper
1/4 c. dried parsley
2 lbs. ziti

In a large simmer pot, cook the sausage for 25 minutes, until well browned. Remove the sausage and pour off excess grease. Add the oil, garlic and onions and cook for 10 minutes over low heat. Add the peppers and cook for 10 minutes, until softened.

Add the remaining ingredients, except the pasta, and cook over medium-low heat for 20 minutes. Add the sausages and cook for another 10 minutes.
