SAUSAGE AND PEPPERS 
2 lbs. sausage
4 onions, sliced
4 peppers, sliced
1 can tomato puree (or 1 sm. can tomato paste + 1 med. can tomato sauce)
1 tsp. oregano
1 tsp. basil
Salt & Pepper to taste
Add water as needed

Form sausage into small balls. Saute onions and sausage and pepper in frying pan. Simmer tomato sauce in pot. Add seasonings. (Onions and peppers may be added directly to tomato sauce instead of sauteed.) Drain sausage on paper towel and add to sauce. Simmer 1 hour.
