CHOCOLATE PEANUT BUTTER CUPS | |
1 lb. Reese's Peanut Butter (smooth) 1 cup butter, melted 1 1/2 lb. confectioners' sugar 1 (6 oz) pkg. Hershey's semi-sweet chocolate chips, melted In a large bowl, combine peanut butter and melted butter (butter may also be used). Stir in confectioners' sugar until well mixed. Roll the mixture between your palms, forming large marble-sized balls. Set aside on wax paper sheets. Melt the chocolate in the microwave or in a double boiler being careful not to allow any droplets of water to touch the chocolate. (Baker's Dipping Chocolate is an easy to use substitute. Follow directions on package.) Stick toothpicks into a peanut butter ball and then dip into the melted chocolate, turning to coat evenly. Place on wax paper to set (may refrigerate if the weather is warm). If keeping these for any length of time, wrap in wax paper strips and twist up both ends (like salt water taffy is wrapped). Refrigerate. You can obtain small candy paper liners at craft stores, and these may be used for making these candies. Try popping one of these into the center the next time you bake chocolate cupcakes! Submitted by: CM |
