THUMBPRINT COOKIES (EASY &
DELICIOUS!)
 
I make trays of these as gifts for the holidays!

1 cup (2 sticks) butter, softened
3/4 cup white sugar
1 tsp. vanilla extract
1 egg
2 cups plus 2 tbsp. all-purpose flour
1/2 tsp. salt
jams or preserves, for filling (your choice)

Preheat oven to 350°F

Cream together butter and sugar. Add in vanilla and egg. Mix thoroughly.

In a separate bowl combine flour and salt. Slowly add to butter mixture.

Roll dough into small balls. Place onto cookie sheet (parchment paper is great to use). Lightly press your thumb into each ball (water on your thumb keeps it from sticking to dough).

Add jams or preserves of your choice to thumbprint (I use strawberry, apricot, red raspberry and black raspberry preserves).

Bake at 350°F for 15 minutes.
