These cookies are perfect for parties and especially for children's holiday parties at school! 1 cup (2 sticks) butter 1/2 cup sugar 1 egg 2 tsp. vanilla 2 cups all-purpose flour 1 tbsp. cornstarch 1 tsp. baking powder raspberry jam or apple mint jelly (or your favorite jam/jelly) Preheat oven to 350°F. Combine butter and sugar in bowl, beat together till smooth. Mix in egg and vanilla. Combine flour, cornstarch and baking powder in the bowl and mix well until all is combined (mixture should be like dough). Prepare baking pan with parchment paper for easy removal or you can use just an ungreased baking pan. Roll dough into 1/2-inch balls (a little bigger than a marble) and place about an inch apart on baking pan. Once pan is full press your pointer finger down on each ball of dough forming a indention. After all balls are pressed take a small spoon and add a small amount of jam or jelly to the indentation. Bake at 350°F for 10 minutes. Cookies when done should look light in color and almost no brown mark on bottom. Submitted by: Sandi Russell |
