BROWN SUGAR AND MUSTARD GLAZE
(FOR CORNED BEEF)
 
4 lb. corned beef brisket
1 gallon water (or as needed)

Boil brisket about 3 hours until tender but not falling apart. Let sit about 15 minutes before glazing.

GLAZE:

1/2 cup light brown sugar, packed
1/2 cup water
1/2 cup brown mustard

Preheat oven to 325°F.

In saucepan, combine sugar, water and brown mustard. Simmer over medium high heat until it becomes like syrup, about five minutes. Continue simmering another 2 to 3 minutes.

Place boiled brisket on a wire rack on a baking sheet. Glaze brisket.

Place glazed brisket in oven and bake at 325°F for 30 minutes while reglazing every 10 minutes until brisket becomes shiny. Watch carefully so as to not burn meat.

Let brisket stand about 15 minutes before slicing.
