EGGPLANT CASSEROLE 
3 c. cooked eggplant
2 c. crumbled saltine crackers
2 eggs, beaten
1 tsp. herb seasoning
1 tsp. salt
1/8 tsp. black pepper
1/2 tsp. savory salt
1 tsp. crumbled basil leaves
1/8 tsp. garlic salt
1/2 stick butter
1/2 c. chopped onion

TOPPING:

3/4 c. crumbled saltine crackers
1/2 stick melted butter

Combine all ingredients except topping. Place in well greased casserole. Cover with the topping ingredients, mixed. Bake in 350 degree oven about 30 minutes.
