ZUCCHINI (EGGPLANT) CASSEROLE 
Zucchini or eggplant
Fresh tomatoes
Fresh onions
1/4 c. butter
2 tbsp. Italian seasoning
1/4 lb. mozzarella cheese, grated
1/2 c. bread crumbs
1/4 c. butter
2 tbsp. parmesan cheese

Preheat oven to 350 degrees. Oil a 13 x 9 inch pan. Layer zucchini slices, tomato slices and onion slices. Drizzle with 1/4 cup melted butter and sprinkle Italian seasoning over all. Cover and bake 20 minutes or until vegetables are fork tender. Sprinkle with mozzarella cheese and combine crumbs, parmesan cheese and butter. Sprinkle mixture over cheese. Bake 10 minutes longer. Can be frozen.
