OZARK HONEY-OATMEAL COOKIES 
1/2 cup shortening or butter
1 cup sugar
2 eggs
1/3 cup honey
1 tsp. baking soda
1 tsp. salt
1 3/4 cups flour
2 cups cooking oats
1 cup coconut

Heat oven to 375°F.

Mix shortening, sugar, eggs and honey, soda and salt thoroughly. Beat until light.

Stir in remaining ingredients. Shape dough by rounded teaspoon into balls.

Place on ungreased baking sheet. Flatten with bottom of glass dipped in sugar. Bake 8 to 10 minutes until light brown. Remove form baking sheet immediately.
