EGGPLANT CASSEROLE 
6 sm. eggplants (diced & steamed until mushy) (with onion, bell pepper, salt & pepper)
2 eggs, well beaten
1/2 stick butter, chunked up
1 c. crunched crackers
1 can cream style corn

Mix these ingredients together and put in casserole dish. Cover with: 1 c. grated cheddar cheese
