EGGPLANT CASSEROLE 
Recipe served in public school cafeteria to kids for lunch. Recipe for steam table casserole pan.

3 med. eggplants

Peel and cut in 1 inch squares. Cook in boiling water and salt until slightly soft. Drain in colander.

Beat 3 eggs, add salt and pepper and 1 cube melted butter. Grate an onion or two and juice of 1/2 lemon.

Fold in with 1 1/2 or 2 cups grated cheese and handful of soda cracker crumbs. Place in casserole in pan of water and bake covered for 45 minutes in 350 degree oven. Remove cover, add more crumbs and dot with butter and cheese.
