BATTERED CHICKEN CHUNKS | |
5 boned and skinned chicken breasts 1/4 c. cornstarch 1 lg. egg Cut chicken up into bite size pieces and place in large dish. Break egg into small bowl and beat with fork until blended, add to chicken and mix. Add cornstarch and mix with spoon or hand until all pieces are coated. Season with salt and pepper. Heat frying pan with small amount of cooking oil unitl hot. Add chicken and separate pieces. Fry until crisp and done about 5 to 7 minutes. Now you may add a sweet and sour sauce and serve over rice or you serve as is and dip into a sauce. The variations are endless. Use your imagination. Mt. Angel |
