BEER BATTER 
2-3 lb. fish or chicken
1/2 c. melted butter
1/2 c. beer
2 lg. eggs, separated
1 c. flour
1/2 c. cornstarch

1. Beat egg yolk, beer and melted butter. Stir in flour and cornstarch.

2. Beat egg whites until they stiffen and add to mixture. Beat a little longer. Add salt, pepper and seasoned salt to taste.
