SEAFOOD BEER BATTER 
1 1/4 c. self-rising flour
1 tbsp. sugar
1 tsp. dry mustard
1/4 tsp. cayenne pepper
1 egg, beaten
1 c. beef (dark beer)
Vegetable oil for frying

Stir together dry ingredients. Combine egg and beer; slowly stir in flour mixture. Dip fish into batter and fry a few at a time in hot oil (400-425 degrees) about 3 minutes or until golden brown. Use haddock fillets. Cut into cubes, scallops, shrimp or oysters. This gives a crisp texture with a malty flavor.
