FRITTER BATTER 
1 3/4 c. flour
1 egg
1 tbsp. sugar
Salt to taste
1 tbsp. corn, peanut or vegetable oil
1 c. beer
1/4 c. water
1/2 c. egg whites (3-4 eggs)

Combine all above ingredients, except beer, water and egg whites. Blend all together with a whisk. Then add the beer and the water, and continue beating until smooth. Beat the egg whites until stiff and then fold them into mixture. Makes about 3 1/2 cups batter for fruits.

If this batter is to be used for coating vegetables or seafood, chicken or meats, do not add the sugar.
