Prepare meat as usual. Preheat oven to 350 degrees. Bake for 1 hour exactly and turn off oven. Do not peek! Ever! Leave meat in oven (but no more than 3 hours). 45 minutes for rare 50 minutes for medium 55 minutes for well done, before you eat. Turn oven to 300 degrees. Cook for 45, 50 or 55 minutes. Then open oven and serve. This will work for other roasts, but they must be a "thick" roast. |
