POTATO TURKEY-BROCCOLI CASSEROLE | |
2 cups cooked turkey or chicken, cut up 1 pkg. frozen broccoli cuts 1 c. rice, uncooked 2 cans mushrooms, optional 1/8 tsp. paprika salt and pepper 1 can shoe string potatoes 1 c. cheddar cheese 1 can cream of chicken soup 1 can cream of mushroom soup 1/4 c. mayo 1/4 c. milk Layer in casserole dish broccoli, turkey or chicken, rice and mushrooms. Mix together soups, milk, mayo, paprika, salt and pepper. Pour mixture over layers in casserole dish. Bake 40 minutes at 350°F. Take out and add 1 cup cheese and can of shoe string potatoes. Bake for 10 minutes or until cheese is melted. |

I followed the recipe fairly closely using fresh broccoli from my garden, fresh mushrooms, a mix of fresh grated cheese on hand (yellow and white cheddars, mozzarella and Parmesan). I also omitted additional salt and added about 2 tbsp. of minced onion and a pinch of crushed red pepper to the soup mix.
