LEMON BATTER FISH 
1 c. unsifted flour
2/3 c. water
1/3 c. lemon juice
1 egg, beaten
1 tsp. baking powder
3/4 tsp. salt
1/2 tsp. sugar
1 lb. fish fillets
Lemon juice
Flour
Vegetable oil

In medium bowl, mix flour, water, 1/3 cup lemon juice, egg, baking powder, salt and sugar. Dip fish (fresh or frozen and thawed) in lemon juice; coat with flour then batter. Fry in hot oil until golden brown, drain. Serve immediately. Refrigerate leftovers.
