“CHEESECAKE PIE (NO BAKING)” IS IN:

CHEESECAKE PIE (NO BAKING) 
1 (6 oz.) Ready-Crust graham cracker pie crust
1 (8 oz.) package cream cheese, softened
1 (14 oz.) can Eagle® brand sweetened condensed milk (not evaporated milk)
1/3 cup lemon juice from concentrate
1 teaspoon vanilla extract
1 (21 oz.) can cherry pie filling, chilled or any other fruit in season

With mixer, beat cheese until fluffy. Gradually beat in Eagle® Brand‚ until smooth. Stir in lemon juice, and vanilla. Pour into crust. Chill at least 3 hours.

After chilled, top with pie filling. Refrigerate leftovers.

Tip: Add whipped cream or other garnish as desired.

This is the recipe I have used for 30 years. It is great; and, is very good put in little one inch diameter cups, without the graham cracker crust, to be taken to a social where it is one of the desserts. Just top it with a marachino cherry.

Another tip is to use 1 tbsp honey instead of sugar in the crust. True "honey graham flavor".

You can make your own no bake crust by breaking up graham cracker crumbs and melted butter and press in a pie tin and chill.

This is my dad's all-time favorite recipe, but I'd long-lost the recipe. I have been making this recipe for 30 yrs (since a kid in Australia). Love it. Have evolved the recipe over the yrs and now fold in a small carton of whipped cream to make it more fluffy and a tsp of gelatin melted in a little hot water to make it set. Yum yum.
