CARBONARA | |
1/4 lb. bacon (cooked and crumbled) 2 tbsp. olive oil 2 tbsp. butter 1 clove of garlic, pressed 2 c. cooked ham (1/2 lb.) 8 oz. spaghetti (cooked, drained) 1/3 c. Parmesan cheese 1/4 c. chopped parsley 1/4 c. sliced black olives 2 pimentos, sliced 1/2 tsp. salt 1/4 tsp. pepper 3 eggs, beaten In fry pan add oil, butter, garlic and ham to pan, saute lightly, add spaghetti, bacon, cheese, parsley, salt and pepper; stir well. Turn off heat. Pour eggs over mixture to quickly toss to coat spaghetti evenly. Add olives and pimento; toss. Decorate with parsley. Serve at once. Makes 4 to 5 servings as an appetizer. Makes 2 to 3 servings as a main dish. |
