SPAGHETTI ALLA CARBONARA

1 tbsp. olive oil
1 lb. spaghetti
1/2 lb. bacon or ham
1 egg plus 1 yolk
1/3 c. whipping cream
1/3 c. grated Parmesan cheese
Salt
Lots of black pepper

Chop in small cubes the smoked bacon or ham and brown with a spoonful of oil in a large pan; fry until fat is melted and the red meat gets brown. Cook the spaghetti in a generous amount of salted water.

In the meantime, whip the egg yolk and whipping cream in a bowl, then add a bit of salt and a generous amount of pepper. Strain the spaghetti. When they are al denta, put them in the pan with the bacon until flavored and then remove them from the stove. Pour them in the bowl with the eggs. Mix and serve immediately with Parmesan cheese.
