PECAN MUFFINS 
1 c. light brown sugar, packed
1/3 c. plain flour
Pinch of salt
1 c. coarsely chopped pecans
2 eggs
1/2 tsp. vanilla

Combine sugar, flour, salt and pecans; mix well. Add eggs and vanilla, stirring well. Fill well greased muffin pans half full and bake at 350 degrees for 20-25 minutes. Remove from pans while warm. Yield 1 1/2 dozen.
